Prepare a complete, flavorful dinner with salmon fillets and asparagus roasted together on one sheet pan using a simple lemon and garlic seasoning.

  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 pound fresh asparagus, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large lemon, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  3. Place the trimmed asparagus on one side of the prepared baking sheet. Drizzle half of the oil mixture over the asparagus and toss to coat evenly. Spread the asparagus into a single layer.
  4. Place the salmon fillets on the other side of the baking sheet. Brush the remaining oil mixture evenly over the tops of the salmon fillets.
  5. Arrange a few thin lemon slices on top of each salmon fillet.
  6. Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp. Cooking time depends on the thickness of your fillets.
  7. Remove from the oven. Garnish the dish with fresh chopped parsley before serving.

Notes

  • For thicker salmon fillets, you may need to add 2 to 3 extra minutes to the cooking time.
  • If you prefer a tangier flavor, squeeze fresh lemon juice over the finished dish before serving.
  • You can prepare the asparagus and salmon on the pan up to 4 hours ahead of time; just cover and refrigerate until ready to bake.
