Make tender steak bites and potatoes in one pan using a rich garlic butter sauce for a quick, easy weeknight dinner with minimal cleanup.

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs small Yukon Gold potatoes, quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Toss the quartered potatoes with olive oil, salt, and pepper on a baking sheet. Roast at 400 degrees Fahrenheit for 20 minutes until slightly tender.
  2. While potatoes roast, season the steak cubes evenly with salt and pepper.
  3. Heat a large, oven-safe skillet over medium-high heat. Add half of the butter. When the butter melts and foams, add half of the steak cubes in a single layer. Sear for 2-3 minutes per side until browned. Remove steak and set aside. Repeat with remaining butter and steak.
  4. Reduce heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Return the partially cooked potatoes and the seared steak bites to the skillet. Sprinkle with Italian seasoning.
  6. Stir everything together gently to coat with the garlic butter mixture.
  7. Transfer the entire skillet to the oven (if oven-safe) or continue cooking on the stovetop over medium heat, stirring occasionally, until the potatoes are fully tender and the steak reaches your desired doneness (about 5-7 minutes more).
  8. Remove from heat. Garnish with fresh parsley before serving.

Notes

  • For medium-rare steak, aim for an internal temperature of 130-135 degrees Fahrenheit.
  • If you prefer softer potatoes, boil them for 5 minutes before tossing them with oil and roasting.
  • You can add 1 cup of broccoli florets during the last 10 minutes of cooking for added vegetables.
