Instructions

  1. Place the rolled oats in a blender or food processor. Pulse until the oats resemble a coarse flour. This step is key for fluffy pancakes.
  2. In a medium bowl, whisk together the oat flour, baking powder, sugar, salt, and cinnamon (if using).
  3. In a separate small bowl, whisk the egg, milk, vanilla extract, and melted butter or oil until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine. Let the batter rest for 5 to 10 minutes. This allows the oats to absorb liquid and helps create a lighter texture.
  5. Heat a griddle or large non-stick skillet over medium heat. Lightly grease the surface with butter or oil.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the surface and the edges look set.

  • For a banana-sweetened version, replace the milk and sugar/syrup with 1/2 cup milk and 1 ripe, mashed banana.
