1 tablespoon olive oil
1 pound cremini mushrooms, sliced
4 cloves garlic, minced
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon salt
12 ounces pasta (fettuccine or penne work well)
3 cups vegetable broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat.
Add sliced mushrooms and cook until they release their liquid and start to brown, about 6 to 8 minutes.
Stir in minced garlic, thyme, salt, and pepper. Cook for 1 minute until fragrant.
Add the dry pasta and vegetable broth to the pot. Bring the mixture to a boil.
Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid is absorbed.
Remove the pot from the heat. Stir in the heavy cream and Parmesan cheese until the sauce is smooth.
Fold in the fresh spinach until it wilts into the sauce.
Serve immediately.
Notes
Use a mix of mushroom types, like shiitake or oyster, for deeper flavor.
If the sauce seems too thick, add a splash of pasta water or milk to thin it slightly.
Stir in fresh parsley at the end for added brightness.
