Make this easy Mexican Street Corn Salad, also known as Esquites. This recipe features charred corn, a creamy dressing, Cotija cheese, and lime for authentic flavor.

  • 4 cups fresh or frozen corn kernels
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise or Mexican crema
  • 1/4 cup sour cream
  • 1/2 cup crumbled Cotija cheese, plus more for topping
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili powder (or Tajin seasoning)
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeño, finely minced (optional)

Instructions

  1. If using fresh corn, cut kernels from the cobs.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until the corn is lightly charred in spots, about 8 to 10 minutes. This charring adds the street corn flavor.
  3. Remove the skillet from the heat and let the corn cool slightly, about 5 minutes.
  4. In a medium bowl, whisk together the mayonnaise (or crema), sour cream, lime juice, salt, pepper, and chili powder (or Tajin) until smooth.
  5. Add the slightly cooled charred corn, crumbled Cotija cheese, chopped cilantro, and minced jalapeño (if using) to the dressing mixture.
  6. Stir gently until all ingredients are evenly coated.
  7. Taste and adjust seasoning, adding more lime juice, salt, or chili powder as needed.
  8. Serve immediately or chill for at least 30 minutes to allow flavors to meld. Top with extra Cotija cheese before serving.

Notes

  • If you do not have a grill, charring the corn in a dry, hot skillet works well to achieve the smoky flavor.
  • You can substitute feta cheese for Cotija cheese if Cotija is unavailable, though the flavor will change slightly.
  • For a thinner consistency, use more lime juice or a splash of water to thin the dressing.
