2 lbs Russet potatoes, cut into 1-inch cubes
3 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for extra heat)
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
Place the cubed potatoes in a large bowl.
In a small bowl, whisk together the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper, if using. This is your seasoning blend.
Drizzle the olive oil over the potatoes. Toss them until they are evenly coated.
Sprinkle the seasoning blend over the oiled potatoes. Toss again until every piece has a good coating of spices.
Spread the seasoned potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crispiness.
Roast for 20 minutes.
Remove the pan from the oven and carefully flip the potatoes using a spatula.
Return the pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are golden brown and crispy on the outside and tender inside.
Serve immediately as a side dish or filling.
Notes
For extra crispiness, soak the cut potatoes in cold water for 30 minutes before drying them thoroughly.
If you prefer a softer texture, reduce the roasting time by 5 to 10 minutes.
You can add 1/2 cup of chopped onion during the last 15 minutes of roasting for added flavor.
