Easy Taco Bell Copycat Mexican Pizza

Make a crispy, cheesy homemade version of the popular fast-food Mexican Pizza using seasoned beef, refried beans, and layered tortillas.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 (16 ounce) can refried beans, warmed
  • 8 small flour tortillas (about 6 inches each)
  • 1 cup enchilada sauce (red)
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup diced tomatoes (optional)
  • Vegetable oil for frying

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Stir in the taco seasoning and water according to package directions. Simmer until the liquid reduces, about 5 minutes. Set aside.
  3. Heat about 1/2 inch of vegetable oil in a separate large skillet over medium-high heat.
  4. Fry the flour tortillas one or two at a time until they are golden brown and crispy, about 1 minute per side. Remove and place on a paper towel-lined plate to drain excess oil. Repeat with all tortillas.
  5. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  6. To assemble the first layer, place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
  7. Spoon half of the seasoned ground beef over the beans.
  8. Top with a second crispy tortilla. Spread the remaining refried beans over this tortilla, followed by the remaining ground beef.
  9. Pour the red enchilada sauce evenly over the top layer of beef.
  10. Sprinkle the shredded cheese blend over the sauce. Add diced tomatoes and black olives if you are using them.
  11. Bake for 10 to 12 minutes, or until the cheese is melted and bubbly.
  12. Slice into wedges and serve immediately.

Notes

  • For extra crispiness, bake the tortillas plain for 5 minutes before assembling the pizza.
  • Use store-bought taco seasoning for speed, or make your own blend of chili powder, cumin, and oregano.
  • If you prefer not to fry the tortillas, you can bake them at 400 degrees Fahrenheit for 6-8 minutes until crisp.
