A simple, fresh salad featuring cucumber, tomato, feta, and a bright lemon-herb dressing, perfect for a light meal or side dish.

Ingredients

  • 2 large cucumbers, chopped
  • 3 medium tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh mint, chopped (optional)

Instructions

  1. Wash and chop the cucumbers and tomatoes into bite-sized pieces. Place them in a large bowl along with the sliced red onion.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the vegetables. Gently toss to coat everything evenly.
  4. Add the crumbled feta cheese and Kalamata olives to the bowl. Toss lightly one more time.
  5. Stir in the fresh chopped mint, if using.
  6. Serve immediately, or chill for 15 minutes to allow the flavors to meld.

Notes

  • For best texture, do not salt the vegetables until you add the dressing.
  • You can substitute fresh parsley for mint if you prefer a different herb flavor.
  • If you want a tangier flavor, add 1 teaspoon of red wine vinegar to the dressing mixture.
