This recipe turns classic meatloaf into an easy, hearty casserole layered with mashed potatoes and topped with cheese.

  • 2 lbs ground beef
  • 1 cup bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 3 cups prepared mashed potatoes (instant or leftover)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, egg, milk, chopped onion, salt, pepper, and Worcestershire sauce. Mix gently until just combined; do not overmix.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish to form the meatloaf base layer.
  4. In a separate bowl, mix the prepared mashed potatoes with the sour cream and melted butter until smooth.
  5. Spread the mashed potato mixture evenly over the meatloaf layer.
  6. Sprinkle the shredded cheddar cheese over the potato topping.
  7. Bake for 45 to 50 minutes, or until the meat is cooked through and the cheese is melted and bubbly.
  8. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • You can prepare the meat mixture and the potatoes a day ahead and store them separately in the refrigerator. Assemble before baking.
  • For extra flavor, mix 1/4 cup of ketchup into the meat mixture before pressing it into the pan.
  • Use leftover cooked bacon bits or chopped chives as a topping after baking for a loaded effect.
