2 lbs jumbo lump crab meat, picked over for shells
1/4 cup mayonnaise
1 large egg, lightly beaten
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon Old Bay seasoning
1/2 teaspoon fresh lemon juice
1/4 cup saltine cracker crumbs (finely crushed)
2 tablespoons fresh parsley, chopped
2 tablespoons unsalted butter, for cooking
Instructions
Gently place the lump crab meat in a large bowl. Do not break up the lumps.
In a separate small bowl, whisk together the mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and lemon juice until combined.
Lightly sprinkle the cracker crumbs and parsley over the crab meat.
Gently pour the wet mixture over the crab meat and seasonings. Use a rubber spatula to fold the ingredients together very lightly. You want to coat the crab without crushing the lumps.
Divide the mixture into 6 equal portions. Gently form each portion into a patty, about 1 inch thick. Do not overwork the mixture.
Chill the crab cakes in the refrigerator for at least 30 minutes to help them hold their shape.
Heat the butter in a large, non-stick skillet over medium heat.
Carefully place the crab cakes in the hot skillet, ensuring not to crowd the pan.
Cook for 4 to 5 minutes per side, until the exterior is golden brown and crispy and the cakes are heated through.
Serve immediately.
Notes
For best results, use fresh, high-quality jumbo lump crab meat.
If you prefer baking, place cakes on a parchment-lined sheet and bake at 400 degrees Fahrenheit for 12 to 15 minutes.
To make a simple tartar sauce, mix extra mayonnaise with chopped pickles and a dash of lemon juice.
