Instructions
Prepare the Asian Soy Ginger Marinade: In a medium bowl, whisk together the soy sauce, orange juice, sesame oil, ginger, minced garlic, and brown sugar until the sugar dissolves.
Prepare the Bright Citrus Herb Marinade: In a separate bowl, combine the lemon juice, olive oil, parsley, oregano, pepper, and salt. Whisk well to emulsify slightly.
Prepare the Simple Garlic Lemon Marinade: In a small bowl, combine the olive oil, lemon juice, sliced garlic, thyme, red pepper flakes, salt, and pepper. Stir to mix.
Place your tuna steaks in a shallow dish or a resealable plastic bag. Choose one marinade.
Pour the chosen marinade over the tuna steaks, ensuring they are fully coated.
Marinate the tuna. For searing tuna, marinate for 15 to 30 minutes maximum. Do not marinate longer than 30 minutes, as the acid can begin to ‘cook’ the delicate fish.
Remove the tuna from the marinade just before cooking. Discard the remaining marinade.

For the best sear, pat the tuna steaks dry with paper towels after removing them from the marinade. Excess moisture prevents a good crust.
If you prefer a dry rub alternative for quick prep, mix equal parts brown sugar, salt, and pepper with dried garlic powder and onion powder. Rub onto the tuna 10 minutes before cooking.
