6 cups chicken broth
1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 cup white rice, uncooked
2 medium carrots, chopped
2 celery stalks, chopped
1 large yellow onion, chopped
2 tablespoons fresh ginger, grated
1 tablespoon fresh turmeric, grated or 1 teaspoon ground turmeric
Combine chicken broth, chicken pieces, rice, carrots, celery, onion, ginger, turmeric, thyme, salt, and pepper in a large pot or Dutch oven.
Bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the pot, and simmer for 20 to 25 minutes, or until the rice is tender and the chicken is cooked through. Stir occasionally to prevent the rice from sticking to the bottom.
Remove the pot from the heat. Stir in the fresh lemon juice.
Taste the soup and adjust salt and pepper if needed.
Ladle the soup into bowls and garnish each serving with fresh chopped parsley before serving hot.
Notes
For a richer flavor, use homemade chicken bone broth instead of standard broth.
If you prefer shredded chicken, cook the chicken whole in the broth first, remove it to shred, then return it to the pot before adding the rice and vegetables.
You can add a pinch of cayenne pepper for extra warmth if desired.
