One Pan Lemon Garlic Shrimp Orzo

Cook shrimp and orzo together in one pan for a fast, flavorful weeknight dinner with minimal cleanup.

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 1/2 cups dry orzo pasta
  • 3 cups chicken broth
  • 1/2 cup dry white wine (optional)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons butter

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Season the shrimp with salt and pepper. Add the shrimp to the hot skillet and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
  4. Add the dry orzo to the skillet and toast for 1 minute, stirring constantly.
  5. Pour in the chicken broth and white wine (if using). Bring the mixture to a simmer.
  6. Stir well, cover the skillet, and cook for 10 to 12 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  7. Remove the skillet from the heat. Stir in the lemon zest, lemon juice, butter, and the cooked shrimp.
  8. Stir gently until the butter is melted and the sauce is slightly creamy.
  9. Garnish with fresh parsley before serving.

Notes

  • If you skip the white wine, use an additional 1/2 cup of chicken broth.
  • For a richer flavor, add 1/4 cup of grated Parmesan cheese at the end with the butter.
  • Ensure you use low-sodium broth if you are watching your salt intake.
