A straightforward recipe for making flavorful, juicy roasted chicken thighs with crispy skin, seasoned heavily with fresh lemon and garlic.

  • 6 bone-in, skin-on chicken thighs
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken thighs completely dry using paper towels. This helps achieve crispy skin.
  3. In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, pepper, and red pepper flakes if you are using them. Mix well.
  4. Place the chicken thighs in a large bowl or a sealable bag. Pour the lemon garlic mixture over the chicken. Rub the seasoning mixture all over the chicken, making sure to get some under the skin if possible.
  5. Arrange the chicken thighs skin-side up in a single layer on a rimmed baking sheet. Do not overcrowd the pan.
  6. Roast for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is golden brown and crisp.
  7. Remove the chicken from the oven and let it rest on the baking sheet for 5 minutes before serving.

Notes

  • For extra crispy skin, place the chicken thighs on a wire rack set inside the baking sheet before roasting.
  • You can marinate the chicken for up to 4 hours in the refrigerator before cooking for deeper flavor penetration.
  • Serve this dish with roasted potatoes or a simple green salad.
