You can make a delicious, high protein lasagna using cottage cheese instead of ricotta. This easy lasagna recipe is perfect for a satisfying family dinner.

  • 1 pound lean ground beef or turkey
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) container cottage cheese (small curd recommended)
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles (oven-ready or cooked according to package directions)
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground meat in a large skillet over medium heat. Drain any excess fat.
  3. Stir the marinara sauce into the cooked meat and simmer for 5 minutes. Remove from heat.
  4. In a medium bowl, combine the cottage cheese, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well until everything is incorporated. This is your high protein cheese layer.
  5. Spread a thin layer of the meat sauce on the bottom of the prepared baking dish.
  6. Arrange four lasagna noodles over the sauce.
  7. Spread half of the cottage cheese mixture evenly over the noodles.
  8. Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
  9. Spoon half of the remaining meat sauce over the mozzarella.
  10. Repeat the layers: four noodles, the rest of the cottage cheese mixture, one-third of the mozzarella, and the remaining meat sauce.
  11. Top with the last four noodles and the remaining mozzarella cheese.
  12. Cover the dish tightly with aluminum foil.
  13. Bake for 25 minutes. Remove the foil and bake for an additional 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are browned.
  14. Let the baked pasta rest for 10 minutes before slicing and serving your family dinner favorite.

Notes

  • If you use oven-ready noodles, make sure your sauce is slightly looser so the noodles absorb enough liquid while baking.
  • For an extra cheesy lasagna, mix a little Parmesan into the cottage cheese mixture.
  • You can prepare this entire dish ahead of time, cover it, and refrigerate it for up to 24 hours before baking. Add about 10 minutes to the covered baking time if baking straight from the refrigerator.
