Bake bell peppers filled with seasoned ground beef, cheese, and keto-friendly taco ingredients for a satisfying low-carb meal.

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet keto-friendly taco seasoning (or 2 tablespoons homemade mix)
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
  4. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  5. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes until the liquid has mostly reduced.
  6. Spoon the taco meat mixture evenly into the bell pepper halves.
  7. Top each stuffed pepper half with shredded cheddar cheese.
  8. Bake for 25 to 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  9. Remove from the oven. Top each serving with a dollop of sour cream and a sprinkle of fresh cilantro before serving.

Notes

  • Use ground turkey or ground chicken instead of beef for a lighter filling.
  • For extra fat, mix 2 tablespoons of cream cheese into the meat mixture before stuffing.
  • Serve with sliced avocado or a side of guacamole for healthy fats.
