You need a low carb meatloaf recipe that tastes like the classic comfort food. This gluten free meatloaf uses almond flour for the perfect texture and stays incredibly juicy. It is an easy keto dinner idea that works great for meal prep and is family friendly keto recipes approved!

  • 2 lbs ground beef (80/20 recommended)
  • 1/2 cup crushed pork rinds (or almond flour for a finer texture)
  • 1/2 cup heavy cream
  • 1 large egg
  • 1/4 cup onion, finely minced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce (check label for low carb)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup, no sugar added (for glaze)
  • 2 tablespoons apple cider vinegar (for glaze)
  • 1 tablespoon erythritol or preferred keto sweetener (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard loaf pan.
  2. In a large bowl, combine the ground beef, crushed pork rinds (or almond flour), heavy cream, egg, minced onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  3. Transfer the meat mixture to the prepared loaf pan and press it down lightly to form an even loaf shape.
  4. In a small bowl, whisk together the no sugar added ketchup, apple cider vinegar, and keto sweetener for the glaze.
  5. Spread half of the glaze mixture evenly over the top of the meatloaf.
  6. Bake for 45 minutes.
  7. Remove the meatloaf from the oven and spread the remaining glaze over the top.
  8. Return the meatloaf to the oven and bake for another 15 to 20 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Let the keto meatloaf rest in the pan for 10 minutes before slicing and serving.

Notes

  • For an even juicier result, you can mix 1/4 cup of grated Parmesan cheese into the meat mixture.
  • If you prefer a less sweet glaze, reduce the sweetener to 1/2 tablespoon.
  • This recipe freezes well; slice it before freezing for easy reheating.
