A simple, no-bake recipe for high-fat, low-carb chocolate peanut butter bites perfect for keto snacking.

Ingredients

Scale
  • 1/2 cup unsweetened coconut oil, softened
  • 1/2 cup natural peanut butter (no added sugar)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol or preferred keto sweetener
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons melted sugar-free chocolate chips (for drizzling, optional)

Instructions

  1. Combine the softened coconut oil, peanut butter, cocoa powder, sweetener, vanilla extract, and salt in a medium bowl.
  2. Mix the ingredients thoroughly until you have a smooth, uniform batter.
  3. Line a small baking sheet or plate with parchment paper.
  4. Drop the mixture by rounded teaspoons onto the prepared sheet to form small balls or use a mini muffin tin lined with paper cups.
  5. Place the tray or tin in the freezer for at least 30 minutes, or until firm.
  6. If desired, melt the sugar-free chocolate chips and drizzle over the hardened fat bombs.
  7. Return to the freezer for 5 minutes to set the drizzle.
  8. Transfer the finished fat bombs to an airtight container and store them in the refrigerator or freezer.

Notes

  • Store these fat bombs in the refrigerator for a softer texture or the freezer for a firmer, more candy-like bite.
  • You can substitute almond butter for peanut butter if you prefer a different nut butter base.
  • Adjust the amount of sweetener to match your taste preference.
