2 lbs boneless, skinless chicken breasts
1 large onion, chopped
4 cloves garlic, minced
2 (15 ounce) cans Great Northern beans, rinsed and drained
1 (4 ounce) can diced green chiles, undrained
4 cups chicken broth
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
4 ounces cream cheese, cubed
1/2 cup heavy cream or half-and-half
Instructions
Place the chicken breasts, onion, garlic, Great Northern beans, green chiles, chicken broth, cumin, oregano, salt, pepper, and cayenne pepper (if using) into the inner pot of your Instant Pot.
Secure the lid and set the vent to sealing.
Cook on Manual/Pressure Cook setting on High for 12 minutes.
When cooking is complete, allow the pressure to naturally release for 10 minutes, then carefully quick release any remaining pressure.
Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot.
Stir in the cubed cream cheese until it melts and the chili thickens.
Stir in the heavy cream or half-and-half until fully incorporated and the chili is creamy.
Serve hot with your favorite toppings.
Notes
For a thicker chili, remove about 1 cup of the liquid and beans before adding the cream cheese, mash them together, and stir the mixture back into the pot.
You can substitute Great Northern beans with cannellini beans.
