Make a hearty, comforting cabbage and sausage soup quickly using your Instant Pot. This recipe uses smoked sausage and cabbage for a simple, one-pot meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage (kielbasa), sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 head green cabbage (about 2 pounds), roughly chopped
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Set the Instant Pot to the Sauté function. Add olive oil. When hot, add the sliced sausage and cook until lightly browned, about 3 to 4 minutes. Remove sausage and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant. Press Cancel.
  3. Return the sausage to the pot. Add the chopped cabbage, chicken broth, diced tomatoes, Italian seasoning, salt, pepper, and bay leaf. Stir gently to combine. Do not overfill past the max fill line.
  4. Secure the lid and set the vent to Sealing. Cook on Manual/Pressure Cook (High) for 5 minutes.
  5. When cooking is complete, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure (Quick Release).
  6. Remove and discard the bay leaf. Stir the soup well before serving.

Notes

  • For a thicker soup, you can add 1/2 cup of small pasta or 1 cup of small diced potatoes along with the broth; increase the cook time to 8 minutes on High Pressure with a 10-minute NPR.
  • If you prefer a lower sodium version, use low-sodium broth and reduce added salt.
  • This soup is naturally low in carbohydrates and fits well into a keto diet plan.
