- 1.5 lb flank steak or sirloin, thinly sliced against the grain
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda (for tenderizing)
- 1 tablespoon sesame oil
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sriracha (optional)
- 1/4 cup cold water
- 2 tablespoons cornstarch
- 4 cups broccoli florets
- In a bowl, toss the sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and baking soda. Let it sit for 10 minutes.
- Set the Instant Pot to Sauté mode. Add sesame oil. When hot, sear the beef in batches until lightly browned. Remove the beef and set aside.
- Add the sliced onion to the pot and cook until softened, about 2 minutes. Add garlic and ginger and cook for 30 seconds until fragrant.
- Press Cancel. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
- Stir in the 1/2 cup soy sauce, brown sugar, rice vinegar, oyster sauce, and sriracha (if using).
- Place the seared beef back into the pot. Secure the lid and set the vent to Sealing.
- Cook on High Pressure for 3 minutes. Once done, perform a Quick Release (QR).
- Remove the beef and set it aside again.
- In a small bowl, whisk together the cold water and 2 tablespoons cornstarch to create a slurry.
- Set the Instant Pot back to Sauté mode (Low setting). Pour the slurry into the liquid and stir constantly until the sauce thickens, about 1-2 minutes.
- Add the broccoli florets and the cooked beef back into the thickened sauce. Stir gently to coat.
- Cook on Sauté mode for 1-2 minutes, just until the broccoli is bright green and tender-crisp. Do not pressure cook the broccoli.
- Serve immediately over rice.
Notes
- Slicing the beef thinly against the grain is key for tenderness.
- Do not skip the baking soda soak; it helps tenderize the meat quickly in the pressure cooker.
- Add the broccoli only after the pressure cooking cycle is complete to prevent it from becoming mushy.
