Follow these steps to create a visually appealing and balanced iced matcha latte featuring a homemade strawberry syrup.

  • 1 cup fresh or frozen strawberries
  • 2 tablespoons granulated sugar (for syrup)
  • 1 tablespoon water (for syrup)
  • 1 teaspoon vanilla extract (optional)
  • 2 teaspoons ceremonial grade matcha powder
  • 2 ounces hot water (175°F/80°C)
  • 1 cup milk of choice (oat milk recommended)
  • Ice cubes
  • 1 teaspoon simple syrup or honey (optional, for matcha)

Instructions

  1. Prepare the strawberry syrup: Combine strawberries, sugar, and 1 tablespoon of water in a small saucepan. Heat over medium heat, stirring occasionally, until strawberries break down and the mixture thickens slightly (about 8 minutes). Mash any remaining large pieces. Remove from heat, stir in vanilla extract if using, and strain through a fine-mesh sieve to remove seeds, pressing down on solids. Let the syrup cool completely.
  2. Prepare the matcha: Sift the matcha powder into a small bowl to remove clumps. Add 2 ounces of hot (not boiling) water. Whisk vigorously in a ‘W’ or ‘M’ pattern until the mixture is smooth and frothy with no visible powder clumps. Add optional sweetener now if desired.
  3. Assemble the drink: Place ice cubes into a tall glass. Pour 2 to 3 tablespoons of the cooled strawberry syrup into the bottom of the glass.
  4. Pour the milk over the ice and syrup layer.
  5. Slowly pour the prepared matcha mixture over the back of a spoon held just above the milk layer. This helps create a distinct layered effect.
  6. Serve immediately with a straw.

Notes

  • Use ceremonial grade matcha for the best color and least bitterness in lattes.
  • Oat milk provides the creamiest texture that complements the strawberry flavor well.
  • If you prefer a sweeter drink, add simple syrup directly to the matcha before whisking.
  • For a quicker syrup, blend the cooked strawberries and skip the straining step, accepting the seeds.
