4 black tea bags (or 2 tablespoons loose leaf black tea)
1 cup fresh strawberries, hulled and sliced
1/2 cup granulated sugar (adjust to taste)
1/2 cup fresh lemon juice (about 3-4 lemons)
1 cup cold water (for steeping)
Ice cubes
Lemon slices and mint sprigs for garnish
Instructions
Make the strawberry simple syrup: Combine the sliced strawberries, sugar, and 1 cup of cold water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves and the mixture simmers gently. Mash the strawberries slightly with a spoon. Simmer for 5 minutes.
Strain the syrup: Pour the strawberry mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the liquid. Discard the solids. Set the strawberry syrup aside to cool.
Brew the tea: Bring 4 cups of water to a boil. Remove from heat and steep the tea bags (or loose leaf tea in an infuser) for 5 minutes for strong tea. Remove the tea bags or infuser.
Combine the base: While the tea is still warm, stir in the cooled strawberry simple syrup until fully mixed. Let the tea mixture cool to room temperature.
Add lemon: Stir in the fresh lemon juice. Taste the mixture and adjust sweetness or tartness by adding more sugar dissolved in a little hot water, or more lemon juice, as needed.
Chill and serve: Refrigerate the tea concentrate for at least 1 hour until thoroughly chilled. When ready to serve, fill tall glasses with ice. Pour the chilled tea mixture over the ice, filling glasses about three-quarters full. Top with cold water if desired to dilute to your preferred strength. Garnish with lemon slices and mint.
Notes
For a stronger strawberry flavor, you can blend half of the steeped strawberries into the syrup before straining.
If you prefer a less sweet drink, reduce the sugar in the syrup to 1/4 cup and add a few drops of liquid stevia if needed.
You can substitute green tea or hibiscus tea for the black tea base. Adjust steeping time for green tea to 3 minutes.
This concentrate keeps well in the refrigerator for up to 4 days.
