2 shots espresso, cooled or chilled
1 cup unsweetened almond milk
2 tablespoons honey
1/2 cup ice cubes
1 teaspoon vanilla extract (optional)
Instructions
Brew two shots of espresso and let them cool completely, or chill them in the refrigerator.
In a small bowl, mix the honey with one tablespoon of the cooled espresso until the honey dissolves into a thin syrup. Add vanilla extract if you are using it.
Fill a tall glass with ice cubes.
Pour the honey-espresso mixture over the ice.
Pour the almond milk over the ice and honey mixture.
Slowly pour the remaining chilled espresso over the top to create layers, if desired.
Stir well before drinking.
Notes
For a stronger honey flavor, gently warm the honey before mixing it with the espresso to create a syrup.
If you do not have an espresso machine, use 1/2 cup of very strong brewed coffee instead.
You can substitute maple syrup for honey if you prefer a different sweetener.
