Make rich, fudgy brownies that taste just like a cup of hot cocoa, complete with a gooey toasted marshmallow swirl throughout.

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows, divided
  • 1/4 cup heavy cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal. Grease the paper lightly.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, and salt. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
  5. Fold in the chocolate chips.
  6. Pour half of the batter into the prepared pan. Sprinkle 3/4 cup of the mini marshmallows evenly over the batter. Pour the remaining batter over the marshmallows.
  7. Dot the top of the batter with the remaining 1/4 cup of mini marshmallows.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  9. Remove the pan from the oven. Immediately pour the heavy cream over the top marshmallows. Use a kitchen torch to lightly toast the marshmallows until golden brown. If you do not have a torch, place the pan under the broiler for 30 to 60 seconds, watching carefully to prevent burning.
  10. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting into squares.

Notes

  • For the fudgiest texture, ensure you do not overbake the brownies. The center should still look slightly soft when you remove them.
  • If you prefer a marshmallow frosting instead of a swirl, wait until the brownies are completely cool, then mix powdered sugar with a small amount of milk to create a thick icing and spread it over the top before adding toasted marshmallows.
  • Use high-quality cocoa powder for the best hot chocolate flavor.
