Make sticky, crispy chicken wings coated in a sweet and spicy honey sriracha glaze using a high-heat baking method.

  • 2 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 1/4 cup sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat the chicken wings very dry using paper towels. This step is crucial for crispiness.
  3. In a large bowl, toss the wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the wings in a single layer on the wire rack.
  5. Bake for 25 minutes. Flip the wings and bake for another 15-20 minutes, or until the skin is very crispy and golden brown.
  6. While the wings bake, prepare the sauce. Combine honey, sriracha, soy sauce, rice vinegar, and garlic powder in a small saucepan.
  7. Bring the sauce to a simmer over medium heat. Cook, stirring occasionally, for 3 to 5 minutes until the sauce thickens slightly and coats the back of a spoon. Remove from heat.
  8. Once the wings are cooked and crispy, transfer them to a large, clean bowl.
  9. Pour the warm sauce over the wings and toss quickly until every piece is fully coated and sticky.
  10. Serve immediately.

Notes

  • For extra crispiness, you can toss the wings in a light coating of cornstarch instead of baking powder, though baking powder helps create a better crust.
  • If you prefer an air fryer, cook the seasoned wings at 380°F (195°C) for 18-20 minutes, flipping halfway.
  • Do not add the sauce until the wings are fully cooked and crispy; adding it too early will prevent the skin from crisping properly.
