1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1/2 cup honey
1/4 cup sriracha sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 cup broccoli florets
1 red bell pepper, sliced
1/2 cup sliced green onions, for garnish
1 tablespoon sesame seeds, for garnish
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
In a small bowl, whisk together the honey, sriracha, soy sauce, rice vinegar, garlic, and ginger to create the sauce.
Pour the sauce mixture into the same skillet. Bring to a simmer and cook for 1 minute, stirring constantly until the sauce thickens slightly.
Return the cooked chicken to the skillet. Add the broccoli florets and red bell pepper.
Stir everything together to coat the chicken and vegetables evenly with the sauce. Cook for 3 to 5 minutes, or until the vegetables are tender-crisp and the chicken is cooked through.
Remove from heat. Garnish with sliced green onions and sesame seeds before serving.
Notes
For a thicker glaze, simmer the sauce for an extra minute before adding the chicken back.
