1 lb large shrimp, peeled and deveined
1 cup uncooked jasmine rice
2 tablespoons soy sauce (or tamari for gluten-free)
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 cloves garlic, minced
1/2 teaspoon ground ginger
1 tablespoon vegetable oil
1/2 cup chopped broccoli florets
1/4 cup sliced carrots
2 green onions, sliced (for garnish)
1 teaspoon sesame seeds (for garnish)
Instructions
Cook the rice according to package directions. For jasmine rice, combine 1 cup rice with 1.5 cups water, bring to a boil, cover, reduce heat to low, and simmer for 15 minutes. Let stand, covered, for 5 minutes, then fluff.
While the rice cooks, prepare the sauce. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and ground ginger. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the shrimp to the hot skillet in a single layer. Cook for 1-2 minutes per side until pink.
Add the broccoli and carrots to the skillet with the shrimp. Stir-fry for 2-3 minutes until vegetables begin to soften slightly.
Pour the prepared honey soy sauce mixture over the shrimp and vegetables.
Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats the shrimp evenly, creating a sticky glaze. Do not overcook the shrimp.
To assemble the bowls, divide the cooked rice among serving bowls. Top with the honey soy shrimp and vegetable mixture.
Garnish each bowl with sliced green onions and sesame seeds before serving.
Notes
For a spicier option, add 1/4 teaspoon of red pepper flakes to the sauce mixture.
You can substitute brown rice for jasmine rice, adjusting the cooking time as needed.
For meal prep, store the cooked shrimp mixture and rice separately and combine just before eating.
