Prepare this fast and flavorful honey soy chicken served over rice for a simple weeknight dinner.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 cups cooked white or brown rice
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 1 tablespoon sesame seeds, for garnish
  • 2 green onions, sliced, for garnish

Instructions

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. This is your sauce base.
  2. Place the cut chicken pieces in a separate bowl and pour half of the sauce base over the chicken. Let it marinate for 5 minutes while you prepare the thickener.
  3. In a small cup, mix the cornstarch and 2 tablespoons of water to create a slurry. Set aside.
  4. Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
  5. Pour the remaining half of the sauce base into the skillet with the chicken. Bring to a simmer.
  6. Stir the cornstarch slurry one more time and pour it into the simmering sauce. Stir constantly until the sauce thickens into a sticky glaze, about 1 minute.
  7. To assemble the bowls, divide the cooked rice among serving bowls. Top with steamed broccoli and shredded carrots.
  8. Spoon the honey soy chicken over the rice and vegetables. Drizzle any extra sauce from the pan over the top.
  9. Garnish with sesame seeds and sliced green onions before serving.

Notes

  • For extra flavor, you can quickly stir-fry the broccoli and carrots in the skillet for 2 minutes before adding the chicken back in.
  • If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes to the sauce base.
  • This recipe works well with chicken thighs if you prefer darker meat. Adjust cooking time slightly.
