8 bone-in, skin-on chicken thighs (about 3 lbs)
1/2 cup Dijon mustard
1/4 cup honey
2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with foil or parchment paper for easier cleanup.
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, soy sauce, garlic powder, salt, and pepper to create the glaze.
Pat the chicken thighs dry with paper towels. This helps the skin crisp.
Place the chicken thighs skin-side up on the prepared baking sheet.
Brush half of the honey mustard glaze evenly over all sides of the chicken thighs.
Roast the chicken for 25 minutes.
Remove the pan from the oven. Brush the remaining glaze over the chicken.
Return the chicken to the oven and roast for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the glaze is sticky and slightly caramelized. Watch closely during the last few minutes to prevent the honey from burning.
Let the chicken rest for 5 minutes before serving.
Notes
If you use boneless, skinless thighs, reduce the total cooking time by about 10 minutes.
For extra crispy skin, you can briefly switch the oven to the broiler setting for the last 1-2 minutes, watching constantly.
Serve these thighs with roasted potatoes or a simple green salad.
