1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 lb baby potatoes, halved or quartered
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup Dijon mustard
3 tablespoons honey
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
2 cloves garlic, minced
1/4 cup chicken broth
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the cut chicken pieces with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the potatoes and cook for 8 to 10 minutes, stirring occasionally, until they start to brown.
Push the potatoes to one side of the skillet. Add the seasoned chicken to the empty side and cook for 5 minutes, turning once, until lightly browned on all sides.
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, dried thyme, and minced garlic.
Pour the honey mustard mixture over the chicken and potatoes in the skillet. Stir gently to coat everything.
Add the chicken broth to the skillet. Bring the sauce to a simmer, then reduce the heat to medium-low.
Cover the skillet and cook for 5 to 7 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the potatoes are tender.
Remove the lid and cook for 1 to 2 minutes more if the sauce needs to thicken slightly.
Garnish with fresh parsley before serving.

For faster cooking, ensure your potato pieces are uniform in size.
If you prefer a slightly sharper flavor, substitute half of the Dijon mustard with whole grain mustard.
