Make quick, flavorful salmon bites coated in a sticky honey garlic glaze that caramelizes beautifully under high heat.

Ingredients

  • 1.5 lb salmon fillet, skin removed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the salmon cubes with olive oil, salt, and pepper on the prepared baking sheet. Spread them into a single layer.
  3. In a small saucepan, combine the honey, minced garlic, soy sauce, apple cider vinegar, and ginger. Bring the mixture to a simmer over medium heat.
  4. Whisk the cornstarch slurry into the simmering sauce. Cook for about 1 minute, stirring constantly, until the sauce thickens slightly. Remove from heat.
  5. Brush half of the honey garlic glaze evenly over the salmon bites.
  6. Bake for 8 minutes.
  7. Remove the pan from the oven. Brush the remaining glaze over the salmon bites.
  8. Switch the oven setting to broil (high). Return the pan to the oven and broil for 2 to 4 minutes, watching closely, until the edges of the salmon are deeply browned and caramelized.
  9. Remove from the oven and serve immediately.

Notes

  • For extra caramelization, you can use a cast-iron skillet on the stovetop over medium-high heat instead of baking, searing the bites in batches until browned on all sides.
  • Garnish with chopped green onions or sesame seeds before serving.
  • If you prefer a less sweet glaze, reduce the honey by one tablespoon and add one teaspoon of sriracha for a little heat.
