Make this quick and flavorful stir fry featuring tender chicken pieces coated in a sticky, sweet, and savory honey garlic sauce with crisp vegetables.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 large carrot, thinly sliced or julienned
  • 1 cup snap peas
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons water
  • 1 teaspoon grated fresh ginger (optional)

Instructions

  1. In a medium bowl, toss the chicken pieces with cornstarch until lightly coated.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the broccoli, bell pepper, carrots, and snap peas to the same skillet. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Push the vegetables to one side of the skillet. Add the minced garlic to the empty space and cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together the honey, soy sauce, water, and ginger (if using). Pour the sauce mixture over the vegetables and garlic.
  6. Bring the sauce to a simmer, stirring constantly until it thickens slightly, about 1 minute.
  7. Return the cooked chicken to the skillet. Toss everything together until the chicken and vegetables are fully coated in the glossy sauce.
  8. Serve immediately over cooked rice or noodles.

Notes

  • For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir into the simmering sauce before adding the chicken back.
  • You can substitute chicken thighs for breasts, or use other vegetables like mushrooms or onions.
  • Add a pinch of red pepper flakes when adding the garlic for a touch of heat.
