1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon salt
0.5 teaspoon black pepper
3 cloves garlic, minced
0.5 cup honey
0.25 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon cornstarch
2 tablespoons water
Cooked white or brown rice, for serving
Instructions
Season the cut chicken pieces with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
In a small bowl, whisk together the honey, soy sauce, and rice vinegar. Pour this mixture into the skillet. Bring the sauce to a simmer.
In a separate small bowl, whisk the cornstarch and water together to create a slurry. Pour the slurry into the simmering sauce, stirring constantly until the sauce thickens into a glaze, about 1 minute.
Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated in the thick honey garlic glaze.
Serve the glazed chicken immediately over portions of cooked rice.
Notes
For a thicker glaze, increase the cornstarch slurry amount slightly.
You can substitute chicken breasts for thighs, but monitor cooking time to prevent drying.
If you prefer a less sweet sauce, substitute 1 tablespoon of brown sugar for 1 tablespoon of honey.
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 3 days.
