Prepare a simple, flavorful chicken bowl featuring chicken glazed with a sweet and savory honey garlic sauce, served over rice with fresh, crisp vegetables.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup white or brown rice, cooked
  • 1 head broccoli, cut into florets
  • 1 large carrot, shredded
  • 2 tablespoons olive oil, divided
  • Salt and black pepper to taste
  • For the Sauce:
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Cook the rice according to package directions. Set aside and keep warm.
  2. Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Roast on a baking sheet at 400°F (200°C) for 12-15 minutes until tender-crisp.
  3. While the broccoli roasts, prepare the sauce. In a small saucepan, combine honey, soy sauce, minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat.
  4. Whisk in the cornstarch slurry. Continue stirring until the sauce thickens, about 1 minute. Remove from heat.
  5. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  6. Pour the prepared honey garlic sauce over the cooked chicken in the skillet. Toss to coat the chicken completely and allow the glaze to bubble for 1 minute.
  7. Assemble the bowls: Divide the cooked rice among serving bowls. Top the rice with the glazed chicken.
  8. Arrange the roasted broccoli and shredded carrots around the chicken. Serve immediately.

Notes

  • For a quicker cooking time, use chicken thighs instead of breasts.
  • You can substitute quinoa or noodles for the rice base.
  • Add a sprinkle of sesame seeds or chopped green onions for garnish before serving.
