- 2 cups fresh strawberries, hulled and halved
- 2 cups granulated sugar
- 1 cup fresh lemon juice (about 6-8 lemons)
- 1 cup water
- Combine the strawberries, sugar, and water in a medium saucepan.
- Heat the mixture over medium heat, stirring until the sugar dissolves completely.
- Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally, until the strawberries soften.
- Remove the saucepan from the heat and let it cool for 15 minutes.
- Mash the strawberries slightly with a fork or potato masher for more flavor extraction.
- Strain the mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the liquid. Discard the solids.
- Stir the fresh lemon juice into the strained strawberry syrup.
- Pour the finished concentrate into an airtight container.
- To serve, mix 1 part concentrate with 2 to 3 parts cold water, adjusting the ratio to your taste.
Notes
- Store the concentrate in the refrigerator for up to 2 weeks.
- For longer storage, freeze the concentrate in ice cube trays or freezer-safe bags for up to 3 months.
- If you prefer a smoother concentrate, blend the cooked mixture before straining.
