1/2 cup rolled oats
1 tablespoon chia seeds
1 scoop vanilla or unflavored protein powder
1/2 cup unsweetened almond milk (or milk of choice)
1/4 cup plain Greek yogurt (or dairy-free alternative)
2 tablespoons natural peanut butter
1 teaspoon maple syrup or sweetener (optional)
Pinch of salt
Instructions
In a jar or container, combine the rolled oats, chia seeds, protein powder, and salt. Mix these dry ingredients well.
Add the almond milk, Greek yogurt, peanut butter, and optional sweetener to the jar.
Stir all ingredients together thoroughly until the peanut butter is mostly incorporated and no clumps of protein powder remain.
Seal the container and place it in the refrigerator for at least 6 hours, or preferably overnight.
In the morning, stir the oats again. If the mixture is too thick, add a splash more milk until you reach your desired consistency.
Serve cold directly from the jar.
Notes
For a vegan option, substitute the Greek yogurt with an equal amount of soy yogurt or an extra tablespoon of chia seeds and increase the milk slightly.
If you use chocolate protein powder, you can add 1 teaspoon of unsweetened cocoa powder for a peanut butter cup flavor.
