A simple recipe for a moist, flavorful meatloaf using lean ground turkey and fresh spinach, designed to be a healthier comfort food option.

  • 1.5 lbs lean ground turkey (93% lean or higher)
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup rolled oats (use certified gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1/4 cup low-sodium ketchup (for mixing)
  • 1 tablespoon Worcestershire sauce (low sodium if available)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Glaze: 1/4 cup low-sodium ketchup
  • For the Glaze: 1 tablespoon brown sugar substitute or maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard loaf pan or line a baking sheet with parchment paper for a free-form loaf.
  2. In a large bowl, combine the chopped spinach, onion, garlic, egg, 1/4 cup ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined.
  3. Add the ground turkey and rolled oats to the bowl. Use your hands to gently mix all ingredients until they are evenly distributed. Do not overmix, as this can make the meatloaf tough.
  4. Shape the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.
  5. In a small bowl, whisk together the glaze ingredients (1/4 cup ketchup and sweetener). Spread half of the glaze evenly over the top of the meatloaf.
  6. Bake for 30 minutes.
  7. Remove the meatloaf from the oven and spread the remaining glaze over the top.
  8. Return to the oven and bake for another 15 to 20 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Let the meatloaf rest in the pan for 10 minutes before slicing and serving.

Notes

  • Using rolled oats instead of breadcrumbs helps keep the meatloaf moist and adds fiber.
  • Finely chopping the spinach helps it blend in without releasing too much moisture during baking.
  • For a lower sodium option, omit the Worcestershire sauce and increase the Italian seasoning slightly.
  • If you prefer a crusty exterior, skip the loaf pan and bake it free-form on a baking sheet.
