A recipe for moist, fluffy muffins using gluten-free flour, ripe bananas, and chocolate chips.

  • 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup milk (dairy or non-dairy)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the gluten-free flour blend, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk the melted butter and brown sugar until combined.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix in the mashed bananas and milk until just combined. Do not overmix.
  6. Gently fold the dry ingredients into the wet ingredients until just incorporated. A few streaks of flour are acceptable.
  7. Fold in the chocolate chips.
  8. Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.
  9. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a dairy-free option, use a non-dairy milk and dairy-free chocolate chips.
  • If your gluten-free flour blend does not contain xanthan gum, add 1/2 teaspoon to the dry ingredients.
  • Use very ripe, spotty bananas for the best flavor and moisture.
  • These muffins freeze well; wrap cooled muffins individually in plastic wrap before placing them in a freezer bag for up to three months.
