1 cup (2 sticks) unsalted butter, softened
1 cup packed dark brown sugar
1 large egg
1/4 cup unsulfured molasses
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup granulated sugar, for rolling
Instructions
Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
In a large bowl, beat the softened butter and brown sugar together until creamy.
Beat in the egg and molasses until fully combined.
In a separate medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
Place the 1/2 cup of granulated sugar in a shallow dish.
Scoop the dough into balls, about 1.5 tablespoons each. Roll each dough ball completely in the granulated sugar.
Place the sugared dough balls about 2 inches apart on the prepared baking sheets.
Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The cookies will flatten and crackle as they cool.
Notes
Use dark molasses for the strongest flavor profile in these spiced cookies.
For a crispier cookie, reduce the baking time by 1 minute and let them cool completely on the sheet before moving.
You can substitute light brown sugar for dark brown sugar, but the molasses flavor will be less intense.
