You need this simple recipe for oven roasted broccoli that achieves incredibly crispy edges, seasoned perfectly with garlic and Parmesan cheese. It is a quick, healthy, and flavorful vegetable side dish ready in under 30 minutes.

Ingredients

Scale
  • 2 large heads broccoli, cut into uniform florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon juice (optional, for brightness)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). You want a hot oven for the best crisp.
  2. Place the broccoli florets on a large, rimmed baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure the broccoli roasts instead of steams.
  3. Drizzle the olive oil over the broccoli. Toss well until every piece is lightly coated.
  4. Add the minced garlic, salt, and pepper. Toss again until the seasonings distribute evenly across the florets.
  5. Spread the broccoli into a single layer on the baking sheet.
  6. Roast for 10 minutes.
  7. Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the broccoli. If using, drizzle with lemon juice now.
  8. Return the pan to the oven and roast for another 5 to 10 minutes, or until the edges of the broccoli are golden brown and crispy. Watch closely to prevent burning.
  9. Remove from the oven and serve immediately as an easy broccoli side dish or low carb broccoli side.

Notes

  • For the crispiest results, make sure your baking sheet is hot before you add the broccoli, or place the sheet in the oven while it preheats.
  • Do not wash the broccoli right before roasting; excess water prevents crisping. Pat it dry if you must rinse it.
  • This recipe works well for meal prep; store cooled leftovers in an airtight container for up to four days.
  • If you want a little heat, add 1/4 teaspoon of red pepper flakes with the salt and pepper.
