Follow this recipe to make tender, pan-seared steak bites coated in rich garlic butter sauce, ensuring a perfectly juicy center.

  • 1.5 lb sirloin or ribeye steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the steak cubes dry with paper towels. Season evenly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side until a brown crust forms.
  4. Reduce the heat to medium-low. Add the butter, minced garlic, and thyme to the skillet.
  5. As the butter melts, tilt the pan slightly and use a spoon to baste the steak cubes with the melted garlic butter for about 1 minute.
  6. Remove the skillet from the heat immediately when the internal temperature reaches 130°F for medium-rare.
  7. Stir in the fresh parsley. Serve the steak bites directly from the pan.

Notes

  • For the juiciest results, use a meat thermometer to check the internal temperature. Aim for 130-135°F for medium-rare.
  • Do not move the steak cubes while searing the first side; this builds the necessary crust.
  • If your pan is small, cook the steak in batches to maintain high heat.
