1.5 lb sirloin or ribeye steak, cut into 1-inch cubes
1 tablespoon olive oil
6 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon black pepper
For the Herb Sauce:
1/2 cup fresh parsley, chopped
2 tablespoons fresh chives, snipped
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, minced
1/4 cup olive oil
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
Pat the steak cubes dry with paper towels and season them evenly with 1 teaspoon salt and 1/2 teaspoon pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers.
Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan; work in batches if necessary.
Sear the steak for 2 to 3 minutes per side until a brown crust forms. Remove the steak from the skillet and set aside.
Reduce the heat to medium-low. Add the 6 tablespoons of butter and the minced garlic to the same skillet. Cook for 1 minute, stirring constantly until the butter melts and the garlic is fragrant; do not let the garlic brown.
Return the seared steak bites to the skillet. Toss gently to coat the steak completely in the garlic butter. Cook for 1 minute more to heat through.
While the steak finishes, prepare the herb sauce: In a small bowl, combine the parsley, chives, thyme, rosemary, 1/4 cup olive oil, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir well to mix.
Remove the steak bites from the heat.
Serve the garlic butter steak bites immediately with the fresh herb sauce spooned over the top or served on the side for dipping.
Notes
For the best sear, make sure your steak is completely dry before it hits the hot pan.
If you prefer a medium-rare steak, aim for an internal temperature of 130°F before removing it from the heat.
You can substitute any combination of fresh, hardy herbs you prefer in the sauce.
