1.5 lb sirloin or ribeye steak, cut into 1-inch cubes
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
For the Sauce:
1/2 cup mayonnaise
2 cloves garlic, minced very fine
1 tablespoon lemon juice
1 tablespoon water (or milk, for thinner consistency)
1/4 teaspoon salt
Instructions
Pat the steak cubes dry with paper towels and season them evenly with salt and pepper.
In a small bowl, mix the mayonnaise, minced garlic, lemon juice, water, and salt to create the sauce. Set the sauce aside.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan; work in batches if necessary. Sear for 2-3 minutes per side until browned.
Remove the steak from the skillet and set it aside on a plate.
Reduce the heat to medium-low. Add the butter and the 4 cloves of minced garlic to the same skillet. Cook for about 1 minute until the garlic is fragrant, scraping up any browned bits from the bottom of the pan.
Return the steak bites to the skillet. Sprinkle with dried parsley and toss quickly to coat the steak in the garlic butter. Cook for 1 minute more.
Remove the steak bites from the heat immediately.
Serve the garlic butter steak bites warm with the prepared creamy garlic sauce on the side for dipping or drizzling.
Notes
For best results, let the steak rest at room temperature for 15 minutes before cutting and cooking.
You can substitute fresh chives for parsley if desired.
If you prefer a thinner sauce, add water one teaspoon at a time until you reach your desired consistency.
