1.5 lbs sirloin steak, cut into 1-inch cubes
1 lb small Yukon Gold potatoes, quartered
4 tablespoons unsalted butter, divided
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon black pepper, plus more for seasoning
1/4 cup beef broth
1 tablespoon fresh parsley, chopped
Instructions
Pat the steak cubes dry with paper towels and season generously with salt and pepper.
Heat the olive oil and 1 tablespoon of butter in a large, heavy-bottomed skillet over medium-high heat until shimmering.
Add the potatoes to the skillet in a single layer. Cook for 8 to 10 minutes, turning occasionally, until they are golden brown and starting to become tender. Remove the potatoes from the skillet and set them aside.
Add the remaining 3 tablespoons of butter to the hot skillet. Once melted, add the seasoned steak cubes. Sear the steak for 2 to 3 minutes per side until a brown crust forms. Do not overcrowd the pan; work in batches if necessary.
Remove the steak from the skillet and set it aside with the potatoes.
Reduce the heat to medium-low. Add the minced garlic and thyme to the skillet drippings. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
Pour in the beef broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer for 1 minute.
Return the potatoes and steak to the skillet. Toss everything gently to coat in the garlic butter sauce. Cook for 2 to 3 minutes, allowing the sauce to thicken slightly and the steak to finish cooking to your desired doneness.
Stir in the fresh parsley. Taste the sauce and add more salt or pepper if needed before serving immediately.
Notes
For best results, use sirloin or ribeye steak. Ensure the steak is at room temperature before cooking for even searing.
If you prefer softer potatoes, you can microwave the quartered potatoes for 3 minutes before adding them to the skillet.
Basting the steak with the melted butter and garlic mixture during the last minute of cooking adds extra flavor.
