1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup chicken broth
1 cup uncooked long-grain white rice
1/2 cup water
1/4 cup heavy cream (optional)
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Season the shrimp with salt and pepper. Add the shrimp to the hot skillet and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
Reduce the heat to medium. Add the butter to the skillet and let it melt. Add the minced garlic and cook for about 30 seconds until fragrant; do not let the garlic burn.
Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
Stir in the uncooked rice, water, and heavy cream (if using). Bring the mixture to a simmer.
Cover the skillet tightly with a lid or foil. Reduce the heat to low and cook for 15 to 18 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
Remove the skillet from the heat. Gently stir the cooked rice. Return the cooked shrimp to the skillet.
Stir in the lemon juice and chopped parsley. Cover and let stand for 5 minutes to allow the shrimp to heat through.
Serve directly from the skillet.
Notes
For best results, use medium or long-grain white rice; brown rice will require a longer cooking time and more liquid.
If you prefer a thicker sauce, let the uncovered mixture simmer for an extra minute after the rice is cooked before adding the shrimp back in.
Do not overcook the shrimp; they cook very quickly.
