1 pound large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/4 cup dry white wine or chicken broth
1/4 cup fresh lemon juice
2 tablespoons fresh parsley, chopped
Salt and black pepper to taste
1 tablespoon olive oil
Instructions
Pat the shrimp dry thoroughly with paper towels and season lightly with salt and pepper.
Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until the butter melts and foams.
Add the shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink and just opaque. Do not overcrowd the pan; cook in batches if necessary. Remove the cooked shrimp from the skillet and set aside.
Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the skillet. Once melted, add the minced garlic and red pepper flakes. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
Pour in the white wine or broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer and reduce slightly for 1 minute.
Stir in the fresh lemon juice. Let the sauce simmer for 1 minute until it thickens slightly. Taste the sauce and add salt and pepper as needed.
Return the cooked shrimp to the skillet. Toss gently to coat the shrimp in the lemon butter sauce. Cook for 30 seconds to reheat the shrimp.
Remove the skillet from the heat. Stir in the fresh parsley. Serve immediately over rice, pasta, or with crusty bread for dipping.
Notes
To prevent overcooking the shrimp, remove them from the heat as soon as they turn pink and curl into a ‘C’ shape.
Use fresh lemon juice for the best flavor in the sauce.
For a richer sauce, you can whisk in 1 teaspoon of cold butter at the very end off the heat.
