Prepare a quick and flavorful rice bowl featuring shrimp cooked in a rich garlic butter sauce, finished with bright fresh herbs and lemon.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup long-grain white rice (or preferred rice)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Cook the rice according to package directions. Keep warm.
  2. Pat the shrimp dry and season lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  4. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  5. Pour in the white wine or broth, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce slightly for 1 minute.
  6. Stir in the lemon juice and lemon zest.
  7. Return the cooked shrimp to the skillet. Toss gently to coat the shrimp in the garlic butter sauce. Cook for 30 seconds to reheat.
  8. Remove the skillet from the heat. Stir in the chopped parsley and cilantro.
  9. To assemble, divide the cooked rice among serving bowls. Top evenly with the garlic butter shrimp and sauce. Serve immediately.

Notes

  • For meal prep, cook the rice ahead of time and store it separately. Cook the shrimp and sauce just before serving for the best texture.
  • If you prefer a spicier flavor, add a pinch of red pepper flakes when sautéing the garlic.
  • Use medium-high heat for searing the shrimp to get a nice exterior without overcooking the inside.
