Prepare a quick and flavorful shrimp bowl featuring tender shrimp coated in a rich garlic butter sauce served over steamed rice.

  • 1 lb large shrimp, peeled and deveined
  • 1 cup uncooked white rice
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice, fresh
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 cup broccoli florets (optional addition)
  • 1 tablespoon extra butter for finishing

Instructions

  1. Cook the rice according to package directions. If using broccoli, steam or lightly sauté it while the rice cooks. Keep both warm.
  2. Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  4. Reduce the heat to medium-low. Add the 6 tablespoons of butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  5. Pour in the chicken broth and lemon juice. Bring the mixture to a gentle simmer, scraping up any browned bits from the bottom of the pan. Let the sauce reduce slightly for 1 minute.
  6. Return the cooked shrimp to the skillet. Toss gently to coat the shrimp completely in the garlic butter sauce. Cook for 1 minute more, just to reheat the shrimp.
  7. Stir in the chopped parsley and the final tablespoon of butter until the sauce thickens slightly.
  8. To assemble the bowls, divide the cooked rice among serving bowls. Top with the garlic butter shrimp and any cooked vegetables. Spoon extra sauce over the top.

Notes

  • For the best texture, do not overcook the shrimp; they should curl slightly when done.
  • Use medium-grain white rice for a classic bowl base, or substitute with brown rice or cauliflower rice for a lower-carb option.
  • Add a pinch of red pepper flakes to the sauce with the garlic for a little heat.
