Make this simple, flavorful shrimp and rice dish entirely in one skillet for quick weeknight cooking and easy cleanup.

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/4 cup heavy cream (optional, for creaminess)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil and 1 tablespoon of butter in a large, deep skillet over medium-high heat.
  2. Add the shrimp to the skillet and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  3. Reduce the heat to medium. Add the remaining 1 tablespoon of butter to the skillet. Add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. Stir in the uncooked rice, salt, and pepper. Cook for 1 minute, stirring constantly to coat the rice in the butter and garlic.
  5. Pour in the chicken broth. Bring the mixture to a boil, then immediately reduce the heat to low, cover the skillet, and simmer for 15 to 18 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during this time.
  6. Once the rice is cooked, remove the skillet from the heat. Stir in the heavy cream (if using) and lemon juice.
  7. Return the cooked shrimp to the skillet and gently stir to combine and reheat the shrimp.
  8. Garnish with fresh chopped parsley before serving immediately from the skillet.

Notes

  • For a less rich dish, omit the heavy cream and use water or vegetable broth instead of chicken broth.
  • If you prefer a spicier flavor, add 1/4 teaspoon of red pepper flakes with the garlic.
  • Ensure your shrimp are fully thawed if using frozen shrimp for even cooking.
